Found marriage record (and thus wifes maiden name) on familysearch. Could be someone else, but seems correct - backed up by Gant one name website.
1841 Census; living (age 27), as head, at Gravel Pits, Horncastle, Lincs with wife and 5 children. Occupation; Agricultural Labourer. There is another, older, George Gant living in High Toynton (about 1 mile away) - very possibly his father.
1851 Census (incorrectly indexed as Gaunt although does actually say that on the form as well) living (age 43??) at Albert Row, Wragby, Horncastle with wife and most of children (Jane is with Uncle James Gant, Rebecca is missing). Occupation; Agricultural Labourer.
1861 Census; living as widower (aged 57) at 5 Foundry Street, Horncastle, Lincs with 3 youngest children.Occupation; Labourer. Daughter Rebecca living as lodger in same street.
1871 Census; from quick look can't find. Free BMD doesn't find obvious death (unless in Doncaster in 1878).
1881 Census; there are 2 x George Gants born roughly the right time in High Toynton, both are 'Ag Lab' although both slightly young as well; 1.Married to Harriot, b1807, Head, living Minting, Lincs with wife Harriot and 2 stepsons. 2.Living with son (George 29), b1806, living Wood Enderby, Lincs. Originally I said; Neither of these give me any great confidence that its our person. Suspect he's dead - however looking at the Gant one name study website it looks like (2) is the correct one.
George# married Rebecca# Harrison on 24 Dec 1833 in High Toynton, Horncastle, Lincs. (Rebecca# Harrison was born in 1814 in Stixwold, Lincolnshire and died before 1862.)
